I have two favorite pumpkin recipes: Creamy Pumpkin Dip and Pumpkin Chocolate Chip Cookies with Caramel Icing. The problem is that I always buy the big cans of pumpkin and have leftovers. What’s a girl to do with half a can of pumpkin puree? Well, this year I finally got smart and came up with a solution.
I measure out half cup scoops of pumpkin and place them on a cookie sheet. Then I put the cookie sheet in the freezer for an hour or so. By then they are pretty solid.
Then I just put them all in a labeled Ziplock bag and wha-la! Little pumpkin hockey pucks that are pre-measured and ready to defrost next time I need a delicious fall treat.

You might want to change oven to freezer, as I don't think they will become frozen in the oven!!! 🙂 That is totally something I would do and I know I would like someone to let me know. Hope you are irritated by my pointing it out. lol

Haha. Oops! It really WOULD take a long time for them to freeze in the oven. I made the change. Thanks for pointing it out. And I hope you meant "hope you are NOT irritated." Guess typos happen to all of us. 🙂

PS, it is a great tip though because I was wanting to try a pumpkin smoothie and that just takes a tiny bit of pumpkin and wasn't sure what to do with the rest becuase I hate wasting anything! Kim

Great idea! Another good way to use pumpkin is to stir it in to oatmeal at the end of the cooking time just to heat it through. A sprinkle of cinnamon or pumpkin pie spice makes it even more wonderful!

Leftover pumpkin… Hmm. Is that like leftover wine? Not sure I've ever seen any… Lol. Kidding! This is a great idea!

This is a great idea. I do this with tomato paste but never thought to do it with pumpkin as well.
