Happy Monday! Hope you all had a great weekend.
Do you ever finish making dinner and wonder if there’s enough food or feel like something is missing to round out the meal? It happens a lot around here.
Easy Parmesan Toast to the rescue! It only takes a few minutes to throw this little side dish together, you probably have the ingredients on hand, and it is one tasty piece of toast!
It’s pretty simple to make: Toast bread, butter it, sprinkle it with parmesan cheese (I use the cheapo stuff in the can, but you can use the real stuff if you’re fancy like that), then broil until the tops are golden brown. Easy as can be!
You can also sprinkle the toast with garlic powder for an extra layer of flavor.
I love to serve this toast whenever I make soup but didn’t plan far enough ahead to have homemade rolls or bread. It’s great with spaghetti or dinner salads too. Try out this simple side and tell me what you think!

Oh my gosh, I just made this Creamy Cauliflower Sauce & you have to try it! (Didn't you try the cauliflower pizza crust a while back?) It tastes like it's loaded with cheese & cream but it has none (just a little milk & butter) ~ http://pinchofyum.com/creamy-cauliflower-sauce
1/2 cup is only 50 calories! (but it definitely doesn't taste like diet food)
