Our family loves homemade macaroni and cheese. It seems like something that we’re all in the mood for frequently. I’ve taught my kids how to help me when we make it. One pours in the noodles, one stirs the white sauce, then they switch jobs the next time around. It’s become a fun little family “thing” that we do.
Today I’m sharing one variation of mac and cheese that is super simple, but don’t let that fool you… it is really yummy and completely transforms the dish!
To begin, you’ll need to make your favorite homemade macaroni and cheese from scratch. I follow my sister’s recipe, which you can find HERE. She even has a video of her kids helping her and it’s pretty adorable, although I may be biased since I am the aunty. It is the best homemade mac and cheese recipe, period. The sauce to noodle ratio is just right and the secret ingredient really adds something special. Try it. You will not be disappointed!
But back to my mac and cheese variation. Are you ready for this? I’m almost embarrased by how easy it is… when the mac and cheese is done, add 1-2 cups of fresh salsa and give it a good stir.
The end! Easy, right? I don’t even make the salsa. I just buy a jar in the deli section at the grocery store! But I’m serious about this, it is a really yummy twist and completely freshens up a common dish.
And if you are a non-hater of the boxed stuff, it’s still pretty good with Kraft and plain old El Paso, in that naughty-foods-you-shouldn’t-love kind of way.
