Because that recipe has been so popular, I decided to try to make a mug cake with everyone’s favorite fall flavor combination — pumpkin spice! Oh, my goodness friends. We have a new winner mug cake recipe. This pumpkin mug cake is soft and moist and bursting with cinnamon, nutmeg, cloves and ginger. And adding chocolate chips just turns it into the most delightful single-serve dessert to make on a crisp fall evening. I want to curl up by the fire with a good book, this pumpkin spice mug cake and a cozy blanket and live my very best autumn life.
How To Make a Mug Cake
If you haven’t tried making a mug cake before, it’s super quick and easy. You just stir up small amounts of common baking ingredients in a coffee mug, then put the mug into the microwave to bake. You end up with a single serving of cake in just a few minutes!
I love that I can have a small serving of something sweet but don’t have to whip up a whole cake that is too much dessert. This recipe is perfect for singles, empty nesters and mamas who don’t want to share. LOL.
Pumpkin Mug Cake Ingredients
This pumpkin mug cake recipe only has ten ingredients and they are all very basic pantry ingredients that you probably already have on hand: flour, brown sugar, baking powder, milk, vanilla, butter, salt, and pumpkin puree of course! Chocolate chips are optional, but I highly recommend. So yummy!
I used all-purpose flour, but cake flour or bread flour would both work just fine.
If you don’t have butter, you could substitute margarine or even vegetable oil, although I prefer the flavor that the real butter gives the cake.
Use the type of vanilla extract you prefer. I personally don’t like the taste of pure vanilla extract, so I use imitation. Vanilla bean paste would be amazing if you’re feeling fancy. You can also double the amount of vanilla if you want to increase flavor even more.
When shopping for pumpkin, make sure it’s just canned pumpkin and NOT pumpkin pie filling.
I have not tested non-dairy milk alternatives, so proceed with those substitutions at your own risk. A non-dairy milk could change the texture substantially.
Pumpkin Mug Cake Add-In Ideas
I prefer a sprinkling of chocolate chips in my pumpkin spice mug cake, but it’s also delicious with other add-ins. Here are a few yummy variation ideas:
- Add cinnamon chips, white chocolate chips or butterscotch chips. All of these options pair well with pumpkin.
- Add caramel bits. These are best to add at the very end (last 20 seconds or so) as they can melt and harden if cooked too long.
- Finely dice an apple and add it into the batter for a marriage of the two best fall flavors.
- Mix a 1/4 teaspoon instant coffee into the batter for a PSL mug cake!
- Add a handful of chopped walnuts or pecans for some crunch.
- When the cake is done baking, drizzle it with a bit of caramel ice cream topping and a big scoop of whipped cream or vanilla ice cream.

Pumpkin Mug Cake
Equipment
- 1 coffee mug
Ingredients
- 1/2 tablespoon Butter
- 3 tablespoons Milk
- 1/4 teaspoon Vanilla
- 1/4 cup All-Purpose Flour
- 1/2 teaspoon Baking Powder
- 1 tablespoon Brown Sugar
- 1 tablespoon Canned Pumpkin Puree
- 1 teaspoon Pumpkin Pie Spice
- 2 tablespoons Chocolate Chips optional
Instructions
- Add butter and milk to a coffee mug and microwave to melt the butter, about 30 seconds.
- Add all remaining ingredients except chocolate chips to the mug and stir until no lumps remain. Stir in the chocolate chips.
- Cook on high in the microwave for about 1 minute or until the cake is cooked all the way through. Microwave cooking times vary quite a bit, so you'll have to check for doneness the first time you make it and add time as needed.
- Let cool for a few minutes, then enjoy your single serving of pure fall deliciousness!
