Oreo ice cream cupcakes are a fun alternative to cake for a birthday party. These tasty individual ice cream cakes are easy to make and so fun to eat!
Serving ice cream at a party can be tricky… by the time you scoop it up for everyone, it’s melting! These cute ice cream cupcakes are made ahead of time and can be served all at once, which means no melted ice cream and more time for you to spend with party guests.
They are so simple to make and there are a million ways to customize them. Choose a different ice cream flavor and add different toppings and there are dozens of possibilities!
These cute ice cream treats have an Oreo cookie at the bottom, then a scoop of ice cream, then sprinkles or crushed Oreos on top. You can also drizzle them with caramel syrup or hot fudge.
I made these for my kids this summer and they were a huge hit. The Oreo at the bottom softens slightly as it sits next to the ice cream and turns into the most amazing crust. It’s the perfect bite sized treat!
One tip for success: let your ice cream soften a bit before scooping it into the cupcake liners. That way it’s easier to scoop and it forms to the shape of the cupcake pan. Then freeze the entire tray of ice cream cupcakes for at least 3 hours to firm up the ice cream again before serving.
Oreo Ice Cream Cupcakes
Ingredients
- 12 Oreo cookies
- 12 scoops ice cream softened
- 6 Oreo cookies crushed
- sprinkles optional
Instructions
- Line the cups of a muffin tin with cupcake liners.
- Place one Oreo cookie into each liner.
- Press softened ice cream into each cupcake liner.
- Top with crushed Oreos or sprinkles.
- Freeze until ice cream is firm again before serving.
