I love cookies. I adore cookies. But sometimes I don’t feel like scooping out individual cookies and taking pans in and out of the oven all night. That’s one reason I love, love, love cookie bars. I can get my cookie fix with less hassle! Today I’m sharing a fun twist on a traditional chocolate chip cookie bar. I’m making caramel M&M blondie bars!
These bars are soft and chewy, easy to make and the M&M’s add extra sweetness and crunch.
The bars are delicious straight out of the oven, but if you want to take them to the next level, don’t skip the caramel drizzle. Plate a cookie bar, then top it with caramel ice cream topping. Oh my goodness. It makes the bars so ooey gooey good.
And the bright colors of the M&M’S make the bars look party ready. Aren’t they so fun?! It would be easy to make these bars holiday specific. Red, white and blue M&M’s would make these a perfect Fourth of July treat or change out the M&M’s for red and green and you’ve got a festive Christmas treat.
Caramel M&M Cookie Bars
Ingredients
- 1 cup butter melted
- 1 cup brown sugar
- 1/2 cup sugar
- 2 eggs
- 2 teaspoons vanilla
- 2 1/2 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1.5 cups M&M’S Caramel (regular M&M’s are good too)
- caramel ice cream topping to drizzle
Instructions
- Preheat oven to 350 degrees. Cream melted butter and sugars. Add eggs and vanilla and mix.
- Add flour, baking soda and salt, then mix until dough is smooth. Gently stir in M&M’S by hand.
- Spread in a greased 9×13″ pan and bake for 25-30 minutes or until center is set. Cool, then cut into squares.
- Optional: Drizzle with caramel ice cream topping before serving.

I would say 12-15, depending on how large you cut the bars. 12 good sized bars, 15 smaller bars.
