These soft gingerbread cookies are quick and easy to make thanks to the help of a cake mix.
I love gingerbread cookies at Christmas time, but I don’t always have some of the special ingredients like molasses or ginger on hand. And sometimes I’m just flat out lazy. So I came up with the easiest possible way to get that spicy holiday flavor I crave.
The frosting is optional, but it definitely takes these cookies to the next level.
Next time you’re at the store, grab a spice cake mix and give this recipe a try. You won’t regret it!

Cake Mix Gingerbread Cookies with Cream Cheese Frosting
Ingredients
Cookie
- 1 spice cake mix
- 2 eggs
- 1/3 cup vegetable oil
Frosting
- 4 oz cream cheese softened
- 1/4 cup butter softened
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla
Instructions
Cookies
- Mix ingredients together until evenly combined. The batter will be really thick. Roll into 1 inch balls and bake at 350 degrees for about 8 minutes, or until the tops are no longer shiny. Makes about 18 cookies.
Frosting
- Beat cream cheese and butter until smooth. Add powdered sugar and vanilla and whip until fluffy.
