I told you I have been baking up a storm since the cold weather hit. Here’s another recipe that was so delicious I had to share. I whipped up a batch to take over to my neighbor as a thank you. And it’s a good thing too…they were so yummy I wanted to eat them all!
Berry Oat Crumble Bars Ingredients
- 3/4 cup butter
- 2 cups flour
- 2 cup brown sugar
- 1 cup oats
- 1/2 cup shredded coconut
- 1/4 teaspoon salt
- 1 cup any flavor of prepared jam
You can use any flavor of jam for these bars. I have tried strawberry, raspberry and cherry and they were all delicious.
I was thinking that apple butter would also be fun to try. Then they would be like apple crisp bars! Yum!
You could also add 1/2 to 1 cup of chopped nuts if you are a nut person. Pecans or walnuts would add a really great crunch and flavor.
Berry Oat Crumble Bars
Ingredients
- 3/4 cup butter
- 2 cups all-purpose flour
- 2 cup brown sugar
- 1 cup quick oats
- 1/2 cup shredded coconut
- 1/4 teaspoon salt
- 1 cup raspberry, strawberry or cherry jam
Instructions
- Melt butter in microwave. In a separate bowl, combine dry ingredients. Add butter and mix until crumbly. Press half of the mixture into a greased 8×8" or 9×9" baking pan.
- Spread the jam evenly over the crust, then evenly sprinkle the remaining mix on top and press it gently into place.
- Bake at 350 degrees for about 30 minutes, until golden brown on top. Cut into squares, cool and serve.
