This easy ice cream cake recipe features three ice cream flavors layered with graham crackers, strawberry topping and chocolate dripping down the sides.
This week is the last week of school for my kids, so I am throwing a party to celebrate. You know I love a good pun, so I went with a strawberry theme and decided to call it a “Berry Glad It’s Summer” party.
The highlight of the party is going to be this amazing three layer chocolate covered strawberry ice cream cake. I mean seriously, look at this deliciousness:

Ingredients
- Three Flavors of Ice Cream (I did chocolate, vanilla and strawberry)
- Strawberry Ice Cream Topping
- Magic Shell Topping
- 1 lb. Fresh Strawberries
- 1 box Graham Crackers
Directions
Begin by lining a springform pan with wax paper. This makes it easier to get each layer out of the pan.
Place a single layer of graham crackers in the bottom of the pan. You might have to get creative to get the rectangles to fit in the round pan.
Spread a layer of ice cream over the graham crackers. It helps to let the ice cream sit out of the fridge and soften for a minute before spreading. Just look at those brownie chunks. Yum!
Since I only have one springform pan, I made the first layer, stuck it in the freezer to harden, then popped it out of the pan and put it back in the freezer wrapped in wax paper so I could make the next layer. To save space (my freezer is full of stuff) I stacked the layers on top of each other like this:
When all three of your ice cream layers are in the freezer hardening, prepare your serving plate. I cut a round piece of wax paper to line the top. Then I used tin foil to cover the frilly ruffled edge. I didn’t want it to get messy while I was working on the cake topping.
Unwrap the first layer of ice cream cake and place it on the serving dish. Spread 1/3 of the jar of strawberry topping on top. Repeat with all three layers of ice cream.
The next step is the most fun. Pour Magic Shell over the top of the cake and let it drip down the sides.
Just look at that ice cream goodness!
Place the whole cake back in the freezer until serving time. Decorate the top with fresh strawberries right before serving. You don’t want to freeze your berries, so it has to be done at the very end.
Chocolate Covered Strawberry Three Layer Ice Cream Cake
