I love to give gifts on Valentine’s Day. It’s a great opportunity to show a little extra love to the people I care about. Of course I give a gift to my sweetheart hubby, but I also like to give gifts to my besties, neighbors, grandmas and other family members.
This year, I’m making the most delicious Valentine’s Day cookie ice cream sandwiches using a new, addictive flavor of M&M’s. Let me introduce you to M&M’s Strawberry!
When I saw them at the store, I knew they’d be the perfect way to add a little Valentine’s Day festivity to my favorite cookie recipe, which I use to make ice cream cookie sandwiches.
Start by making the cookie dough (scroll to the end of the post for the recipe), then mix in a bag of Strawberry M&M’s.
Bake the cookies until the centers are set and they are just beginning to brown.
Now comes the fun part… making them into ice cream sandwiches! You’ll want to buy a box or ice cream, not a round carton.
Open the box all the way up and cut slices of ice cream. Obviously, you’ll need to work quickly so the ice cream doesn’t melt.
Use a large cup or a round cookie cutter the size of the cookies you made to cut round disks of ice cream from the slices you just made.
Stack one cookie on top, one cookie on bottom, then drizzle melted chocolate over the top for the finishing touch.
That’s the secret to perfect looking ice cream sandwiches! I’m going to be giving them to our neighbor who plows our driveway with his big tractor every time it snows. He definitely deserves a little thank you!

Strawberry M&M’s Ice Cream Sandwiches
Ingredients
- ¾ cup granulated sugar
- 1 cup brown sugar
- ¾ cup margarine or butter
- 2 eggs
- 1 tablespoon vanilla
- 2 ¾ cup flour
- ¾ teaspoon baking soda
- ½ teaspoon salt
- 8 oz. package M&M's Strawberry
- 1 package strawberry ice cream (preferably in a box)
Instructions
- Cream butter and sugars together. Add eggs and vanilla and stir until evenly mixed. Add dry ingredients and stir by hand until just moistened. Add M&M’s and stir gently.
- Drop dough by the tablespoon onto a cookie sheet and bake at 350 degrees for around 11 minutes. Watch the cookies—when they barely start getting brown on top and are no longer shiny, take them out but WHATEVER YOU DO, DO NOT OVERBAKE!
- I suggest making one test cookie to see how long to bake them and if the texture is right. Then you can increase/decrease baking time when you put in a full batch.
- Once the cookies are completely cool, cut ice cream in to 1 inch slices. Use a cookie cutter or cup the same size as the cookies to cut circles of ice cream.
- Place the discs between two cookies. Drizzle with melted chocolate, if desired. Quickly place sandwiches back in the freezer to firm up.
- If not serving immediately, wrap in plastic wrap and put in the freezer.
