I’m sure you’ve seen all the different treats on Pinterest that claim they can be made in the microwave. It sounds like the perfect solution: quick baking time and individual serving size means you can have a treat any time without eating an entire batch of something.
I’ve sort of made it my quest over the last few months to find out if there is a good microwave treat recipe out there.
My first try was several months ago with the microwave cookie (read about it HERE). Not so successful. It was rubbery and just too weird. We still ate it (I mean it is sugar, fat and chocolate), but didn’t love it.
Next try was this recipe:
It looks good, right?! It’s a chocolate peanut butter mug cake. I thought this one would be the winner for sure. I don’t know if I did something wrong or what, but…it was so gross! Even my kids wouldn’t eat it! We ended up tossing it. Good thing it was only one mug’s worth, right?
Then I came across another recipe. It caught my eye because there was no egg in it, which I suspect is what was making the final product in other attempts so rubbery. Look at this chocolaty goodness:
Can I just say that it was love at first bite?! You whip a few ingredients together in a mug, microwave it for about 40 seconds and end up with a gooey lava cake/brownie that tastes great and satisfies even a crazy chocoholic like myself. And it was cooked in the microwave. My mind is blown.
2 tablespoons butter
2 tablespoons water
1/4 teaspoon vanilla
1 tiny dash salt
4 tablespoons white sugar
2 tablespoons cocoa powder
4 tablespoons flour
Melt the butter in a coffee mug. Add water, vanilla and salt and stir until smooth. Add sugar, cocoa powder and flour and stir until all the lumps are out. Put the mug in the microwave for 40 seconds (longer if you don’t want the awesome gooey fudge center). And that’s it…you are done! Enjoy with a glass of milk or a dollop of whipped cream. Or ice cream if you have it…but that’s the whole reason you whipped up this little mug cake anyway, right? If you’d had ice cream in the first place, you wouldn’t have needed a sugar fix. But I digress…
So now you will either love me or hate me for introducing you to this sinful little recipe. I have had it two nights in a row now. Dangerous, I tell you…dangerous!

My first mug cake tasted good, but what a mess. It said to use a large mug, but I guess I didn't understand what that meant! We have made it on more than one occasion – Nutella Mug Cake from Angie McGowan at the Family Kitchen. Yum!
I am going to try yours though, because we don't always have Nutella in the house!

Yay! I wont be mad at you until I gain 10 lbs. haha. I just tried it and it was delicious. I added nuts and whipped cream. Yummy. This is my little secret. I am not letting the kids in on this one.

Okay, so I've been trying for a while to find an ooey gooey recipe for my treasured microwave as the recipe my aunt gave me from her cousin isn't chocolately enough. So I just made this recipe about 5 minutes ago and the mug is in front of me.
Other than it being hot, I approve. And I think I might have to make another. Because I might have added one extra tablespoon of flour cause I was excited. The batter is also very yummy too.

WOW. AMAZING. I've tried so many microwave mug recipes and this is the ONLY. I REPEAT ONLY recipe that i'm satisfied with!!!! I didn't have any cocoa powder, so i melted some dark chocolate and used that instead, and i added a teensy bit of baking powder (although it might have too little an amount to have an effect, so scratch that i guess?) and I used milk instead of water. Oh, and I forgot to add salt. But it was still DELICIOUSS. Perfect with some dulce de leche gelato too;) thank you!

How big is that mug you used? I'm looking at the ingredients and 1/4 cup of sugar and 1/4 cup of flour seems like an awful lot for a standard 12 ounce coffee mug. I just don't want it exploding on me! 😀

I think you read the recipe wrong… there's only 4 tablespoons of flour and 4 tablespoons of sugar. Hope that helps!

Made this today and it was more gooey than cake like. Have 1100 watt microwave. Could this be the problem? I did cook itb15 secs more than recipe called for.

If it was still gooey, I would cook it for 15 second intervals until it's the consistency you like. I personally like it gooey… it's like a lava cake!

Where did you find the calorie information? It's not part of my original post, so I'm not sure what you are referring to. But I can tell you it's definitely NOT a low calorie treat. Haha!

The original(?) recipe that I found – which then linked me to here – gives a calorie count of 140. BUT, it also says that the ingredients you list above serves 4!! I have an almost identical recipe using 3 tbs flour and sugar and equivalent amounts of the rest and half of that is more than enough for me! I have to make it with gluten free flour but it still works really well. Wonderful for satisfying a chocolate craving.

This site is the source of the original recipe, so I have no idea where that calorie count came from. It's definitely NOT low cal. I would never claim that. It's chocolate decadence and kind of the opposite of healthy! Haha. Glad you were able to satisfy your sweet tooth Susie!

I'm on a special diet for ms that doesn't allow for saturated fat (like the butter). Will this receipe work with canola oil substituted for the butter? I'm allowed to use coco with alkaline so the coco is not a problem.

Chocolate and lemon are two of my favorites as well. However, I don't have any recipes on my site that use lemon curd. I do know it's a great cupcake filler.

O…M…G! CHOCOLATEY, GOOGY, YUMMY CUP OF MMMMMMM. Just made these for me n hubby after a wonderful cod dinner. Wow, superb, perfect. I did go 15 seconds longer only becauae I forgot that things still cook after the waving. Wasnt as gooey, but such a rich finish to a perfect meal. Thank you for sharing. On a side note … glad I didn't know of this years ago, we'd be 600 lbs by now. ; )

For someone who doesn't bake much, this is not only super easy, it also has the right dose of chocolate. Store-bought products never seem to provide the proper 'fix' of chocolate, so I tend to eat more, trying to satisfy my 'fix'. But THIS recipe…. OH YEAH <3

Do NOT make this recipe by converting tbsp to grams.
My measuring spoons are packed so I used the kitchen scale and it was definitely not sweet enough and was super thick. The brownie tasted like extra dark chocolate and was VERY dense.

My family and I are vegan, but still made this. We just used vegan butter and almond milk. It was still delicious! (I also recommend semi- sweet chocolate chips in it, as it may be a tad dry.)😀

Just made this and yes, it was a success! I'm going to try adding almond extract next time and also I'll microwave it for 10 or 12 seconds, since I didn't get the gooey center. And yes, it would be absolutely killer with vanilla ice cream!!
