I’ve had a few recipe fails recently that have made me really sad. Don’t you hate that?! So today I wanted to boost my wounded ego and share a yummy recipe that is tried-and-true… the very best way to make streusel muffins.
You can use any muffin recipe you’d like and the streusel will still work, but I will share my absolute favorite with you. It’s moist and flavorful, with little bits of apple for texture. Mmm!
Moist Banana Apple Muffins
2 medium bananas, mashed
1 apple, chopped into small pieces
1/2 cup craisins (optional)
1/3 cup butter, melted
1/4 cup brown sugar
1/2 cup white sugar
1 egg
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
Mix wet ingredients together, including fruit. It will look like this:
Sift dry ingredients together and add to wet. Stir gently until just mixed through–don’t overmix or your muffins will be tough! And don’t worry…. the batter is supposed to be pretty thick. Line a muffin pan with paper liners and divide batter to make 12 muffins.
Now for the tricks of perfect streusel topping. It starts with the recipe. I have tried many different combinations, and this is my favorite:
The Best Streusel Topping
2 tablespoons butter, cold
1/4 cup white sugar
3 tablespoons flour
1/2 teaspoon cinnamon
2 tablespoons quick oats
Mash ingredients into the butter with the back of a fork until you have a crumbly, uniform mixture. Mine looked like this:
If you really want a lot of streusel, you could even double this recipe.
Here’s the biggest trick: bake the muffins for about 5 minutes, then pull them out and add the streusel topping. This keeps it from sinking into the muffins! Here are my muffins partially baked, loaded with topping, and ready to be put back in the oven:
Bake the muffins for a total of 17-20 minutes, or until a toothpick inserted in the center comes out clean. Overbaking will dry the muffins out, so keep a close eye on them.
When they are done, you’ll have beautiful, moist, delicious muffins with the perfect crunchy, sweet topping.
The streusel topping takes these muffins to the next level. Really, they are so delicious that you will be sure to get compliments from anyone who tries one.
The Best Streusel Topping
Ingredients
- 2 tablespoons butter, cold
- 1/4 cup white granulated sugar
- 3 tablespoons all-purpose flour
- 1/2 teaspoon cinnamon
- 2 tablespoons quick oats
Instructions
- Preheat the oven to 425 degrees F.
- Make your favorite muffin batter and fill up 12 lined muffin cups with batter.
- Measure out all ingredients for streusel and place in a small mixing bowl.
- Mash all streusel ingredients into the butter with the back of a fork until you have a crumbly, uniform mixture.
- Bake the muffin batter for about 5 minutes, then pull the tray out and add the streusel topping. This keeps it from sinking into the muffins!
- Reduce heat to 350 degrees F and finish baking the muffins for an additional 12-15 minutes, or until a toothpick inserted in the center comes out clean. Overbaking will dry the muffins out, so keep a close eye on them.
- Remove muffins from baking tray and cool before serving.
- Store in an airtight container for up to five days.
